Thanks for asking. For all those who are interested here it is:

Apricot Bread

1 C oil
2 C sugar
3 C flour
4 eggs
1 can evaporated milk
1 1/2 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1 10 oz jar Baker's apricot filling (I use 2 jars - it gives it more of an apricot flavor)

Mix all ingredients together and bake in 2 loaf pans. Bake in a 350 degree oven for 1 hr and ten minutes. (I start checking breads at 1 hour). Breads are done when a toothpick inserted in center of bread is clean. (This recipe also can be made into 6 small loaves. Cut back on baking time by 10-15 minutes.)

You are so welcome. This recipe was my aunt's and I have kept her memory alive by baking it often. My brother-in-law waits for it every Thanksgiving and Christmas!
