first time couple, advise pleaseee?

my husband and i want to plan a trip to Disneyland, im 22 hes 24 and we have no children. i love Disney and went to Disneyland for my 20th birthday. It was fun but ive always wanted to go to Disneyworld.
The appeal being having alot of activites and options in one place and of course the magic of Disney Smile
anyways i have a few questions for you guys.
firstly we are both vegans. ive done a bit of research and found a few options but if anyone has any input on where the easiest places to eat vegan in the parks are then that would awesome.
whats the best time of the year to go? ive thought about doing Christmas because my family nor his do anything very special for Christmas and it just sounds awesome. do they shut down all the pools and waterparks during Christmas/winterseason?
im thinking i want to stay at animal kingdom, but i also want a hotel that feels luxurious and where we can enjoy adult activites (spa, drinking etc) any suggestions?

As for the vegan thing... as far as I know of, anywhere you go you can request it.

Best time of the year depends on who you ask to be honest. Me? November and not during the week of Thanksgiving. But the week before and after are great times. And you will get the christmas vibe if you go AFTER Thanksgiving as well.

AKL is very grownup to be honest. We have kids, but there are TONS of couples who are there. Its a very grownup place to be honest. If you want more grownup... then I suggest something on the monorail like the Poly or Contemp. And all of these places have stuff to do.

Congrats on planning a Disney World trip!

I am a vegetarian (but often order vegan at restaurants) and love Disney for the amount of options they have. I will say that Animal Kingdom Lodge has some of THE BEST vegan options. The table service restaurants have vegan menus and even the quick service has many options.

As for the parks, I haven't ever had a problem requesting special meals after being seated. Sometimes, the chef will come out and speak with me directly. If you want to be more certain of the food or request specific vegan food items, make a reservation at least 48hrs ahead and let them know of your dietary restrictions. Disney excels at dealing with all sorts of "alternative" diets.

I will recommend Bistro de Paris in Epcot if you want a fancy signature meal. I have eaten as a vegan there 3 times without giving advance warning about dietary restrictions and the servers and chefs were able to make 3 different and fantastic meals!

You will have NO PROBLEM what so ever feeling luxurious at the Animal Kingdom Lodge, as a AAA four diamond resort it is full of plush, luxury offerings. The pools are fantastic, the massage & fitness center is top rated by Conde Nast Traveler. Jiko and Sanaa Restaurants have been racking up awards the past two years. There are a total of 5 bars (2 in restaurants, 2 at pools, and 1 in the lobby), and Jiko has an award winning wine list. Room service is fantastic, and the overall service is beyond compare. Not to mention that it is home to the largest collection of African Art outside of the African Continent with some extremely unique pieces. I assure you, the Animal Kingdom Lodge is a Deluxe and Grown Up Resort.

If you're fine with crowds, Christmas is a fantastic time to go. It will however be absolutely packed with people, lines will be very, very long and it will be hard to get dining reservations if you don't book them at 180 days out. When we travel during the winter, I often do Disney the first week of December. All the decorations are up and you get that CHristmas feel without dealing with the massive crowds.

And in Downtown Disney, they have a Babycakes Vegan Bakery so you can go get some sweet goodies! It's funny to note that the vegan bakery is inside the Pollo Campero restaurant building (A fried chicken restaurant).
