We are vegan too! I think you've seen all the places I've booked but I've heard especially good things about the AKL restaurants which have set vegan menus - we booked Sanaa. The Wave has a veg menu you can ask for, and Tusker House meant to be good too. Coral Reef has a tasty looking fake chicken dish. Sunshine Seasons looks fab for CS too.

Fake Chicken Dish...lol....I remember seeing a chalk board outside an Irish restaurant in Spain..It read.."Today's special is Vegetarian Steak Pie." ....

I am not vegan, but my niece is, and pretty much any TS restaurant will accommodate your needs if you alert them when you make your ADR. At 'Ohana they made her a veritable off-the-menu feast - apps, entree, and tofu ice cream for dessert.
