I think it's a Stouffer's Mac-nCheese night here tonight, maybe some greenbeans and a salad. I think I'll pretend I'm at Liberty Tree Tavern. LOL

He does still have it....he will fix steaks for him and the kids and i'll be eating a bowl of cereal or ramen....LOL

sure. it's really good and easy. it's an ina garten recipe.i make it once a month or so. it's great with mashed potatoes and some kind of veggie tomorrow it might be cauliflower and red peppers because i have some i need to use up.

Is yours poached in olive oil with rosemary?

One time my room mate left our in the over too long, the cloves of garlic turned into crispie litlle chips. LoL, still not so bad.

no it's all sauteed together.

It sounds much more difficult then it is. I just use chicken breasts and no cognac. I also don't use cream, just milk. Sometimes I have heavy cream in the house because i have baked something or am about to. The heavy cream is better tasting, but DH doesn't notice the difference.

edit: If you are worried about the garlic, it actually comes out sweet and not as garlicky.

Finally made a menu! (Well...earlier this week actually) -

Grilled chicken with warm roasted vegetable and orzo salad
Italian BBQ pizza (Carrabba's style)
Pork chops with plantain chip breading (Publix "Aprons" dish - super easy)
Vietnamese-style steak tacos (but I'm making mine as lettuce wraps) - So Liv recipe

Good, varied, fairly inexpensive, and fairly quick Smile

I've been cleaning, doing laundry and started packing today. I barely sat down all day. The last thing I want to think about is cooking dinner.

Swordfish seasoned with Montreal steak seasoning and salad. The swordfish would've been grilled, but thunderstorms will arrive this afternoon, so it'll be broiled inside instead.

We're having a Mexican Lasagna tonight. It's chilly today so I have no problem turning the oven on and heating up the house! Not many days left before it's too hot for me to bake anything. We went out yesterday and bought a grill so that I can cook throughout the summer without raising the temp in the house!
