Chicken Tinga Cone From The 4 Rivers Cantina Barbacoa Truck At Disney Springs

Like many urbanites today, I love a food truck. At the Walt Disney World Resort, Disney Springs is the place to go for a sampling of delicious fare from these mobile kitchens. On my last trip to the vacation kingdom I stopped by the 4 Rivers Cantina Barbacoa Food Truck to try the highly instagram-able Taco Cones.

The award winning 4 Rivers Smokehouse has more than a dozen restaurants across Central Florida that keep bringing in guests who make it the most successful BBQ chain in Florida. Inspired by his culinary adventures in Mexico City, owner John Rivers has developed the food truck's barbacoa-style menu specially for Disney Springs.

Signature dishes being served up at the location just outside of World of Disney feature the famous 4 Rivers meats such as brisket and pulled pork, but they have been given a twist of the Caribbean, being prepared using traditional barbacoa techniques and methods.

The 4R Cantina Barbacoa Food Truck menu has a variety of offerings, including Nachos, Tacos, and Squash Blossom Quesadillas, as well as a the Taco Cone and Burrito Bowl. Guests have the ability to choose from five different fillings that make the mix and match menu much larger than it seems. Of course we can't forget that they also serve Chocolate Hazelnut Spread Nachos, and Dulce de Leche Churro Balls for dessert.

After seeing them pop up all over my Instagram feed, I had to head to 4 Rivers for the photogenic walking taco ever. The taco cone itself is made from a crisp flour tortilla that has been deep fried. The cone makes for a tasty container, but is fairly bland on its own. Luckily it comes absolutely stuffed with your choice of filling, lettuce, pico, sour cream, guacamole and jalapenos. If you plan on eating the cone, be sure to use it for scooping out the inside or crumbling pieces on top for some extra crunch as you eat your way down.

I chose the Chicken Tinga Taco Cone, and was really happy with what I got. Chicken Tinga is a classic shredded chicken taco filling prepared with sliced onions and a tomato chipotle sauce. The 4 Rivers version is slightly sweet, and didn't have much in the way of heat.

The portion of the taco cone is substantial on its own and can easily serve as a meal for one person. Or - if you are snacking your way through Disney Springs tasting all the things, one can is more than enough for two to share.

Though I have had mixed reviews of the 4 Rivers Cantina Barbacoa Truck I can honestly say that the Chicken Tinga Taco Cone was delicious and I would happily make a stop here again to try something else on the menu.
