Lemon Bluberry Cupcake at the Gasparilla Island Grill

Thanks to the cupcake obsession of our friends over at the Disney Food Blog, we're always on watch for fantastic Disney cupcakes. A great cupcake can't just be sweet, it's got to be full of flavor and have a stellar cake to icing ratio. Earlier this month I stopped into the Gasparilla Island Grill at Disney's Grand Floridian Resort & Spa to see what I could find.

Walking up to the pastry case I saw that there were several options before me, but the most cheerful and beautiful of the selections was without a doubt the Lemon Blueberry Cupcake. I reached in and picked up one of these sunny little packages, carefully nestling it into a specialty cupcake box. I could smell the sweet lemon scent of the frosting, and the rock sugar around the edges seemed to keep the frosting off my fingers.

Once settled in to a comfortable booth by the window, I got down to business unwrapping this sweet little cake. As I unwrapped the paper I noticed that the cake seemed to be of the plain white variety - this left me hoping that the center would be full of delicious blueberry filling. After all - it had a blueberry on top - it must be there someplace. I grabbed a knife and cut it in half.

There I found the blueberry filling nestled in the center space. This arrangement has become pretty standard amongst Disney cupcakes, and honestly I was a touch disappointed in the amount of filling.

The cake was indeed a simple white cake, a little on the dry side, but compensated by the ample amounts of frosting. The filling tasted like a pretty standard canned blueberry filling, nothing special, it could have been helped immensely by a pop of lemon zest. The frosting however, it made the whole dessert. The bright fresh taste of the lemon was tart and sweet, whipped to a creamy texture and piped high a top the cupcake.

While the cake and blueberry alone didn't blow me away, when you combined the each part together they created a bright and fun filled bite. I wouldn't make a special trip just to pick up one of these, but if you're going to be near Gasparilla Island Grill and love lemon, this makes for a solid snack or dessert.
