Good kayaking in Central Florida?

We'd love to take a day or two on our next trip to kayak, but I have no clue whatsoever if there are any kayak-rental boathouses or companies near Orlando. There are tons of lakes, so there's got to be something.

(Also, I don't think kayaking at Coronado Springs or something like that is going to scratch the itch... laugh )

When we did our manatee swim excursion there were people kayaking to see them at the same time. It looked like a good way to get close to them.
