The Smokehouse isn't open yet, all the currently released information can be found on the Disney Food Blog here

In the US a smokehouse restaurant is one where you are going to find BBQ smoked meats (usually pork, beef brisket, and ribs). Seasonings are dry rubbed into the meats and then cooked low and slow until they are fall off the bone tender. Different smokehouses use different woods to create a variation of flavors in the final product. Sometimes the finished products are topped with a BBQ sauce, sometimes not. BBQ is HUGE business in the States and there are many different regional variations on the flavors of the sauces and rubs. I'm not sure what style will be used at this new location.

Being that this is a counter service restaurant, I'm going to guess that what ends up being served will be pretty portable. I'm expecting ribs, pulled pork, and a beef brisket sandwich. Maybe some sort of chicken, maybe. That is a total wild guess though.

Great news. I've been wanting another BBQ place in Disney for such a long time. I love Flame Tree, don't get me wrong, but I really hope they offer food you can't get at Flame Tree like brisket and burnt ends! And it's counter service so the wait shouldn't be too long.
